Flavor Your Life shares these two recipes for sauces that can be used as a key ingredient in many dishes:
Pesto Genovese - Ingredients include 2 garlic cloves, 6 bunches of basil, 4 tablespoons of pine nuts, 1 cup of extra virgin olive oil from Liguria, 4 tablespoons of parmesan cheese, 2 tablespoons of pecorino cheese, and a pinch of salt. The pecorino cheese can be substituted with parmesan cheese if desired, and the Ligurian olive oil can be substituted with the organic olive oil or extra virgin olive oil of choice. Blend together the basil, pine nuts, salt, and garlic. After blended well, combine together with the cheese and olive oil in a bowl. Mix until creamy.
- Pesto Trapanese - This recipe requires 2 cups of tomatoes, 4 tablespoons of toasted salted almonds, 4 tablespoons of extra virgin olive oil (preferably from Sicily), 5 cloves of garlic and 10 basil leaves. Finely chop the basil, garlic and the almonds together. Add the tomatoes to the mix once they have been coarsely chopped. Add extra virgin olive oil and salt and pepper to taste. Prepare pasta of choice (enough for 4 people) and add the sauce. Garnish the dish with your choice of either parmesan or pecorino cheese.
