She created the blog to share her journey from sick and tired to healthy and happy. After being diagnosed with inflammatory disease, Taylor healed herself by radically changing the way she ate—from a typical American diet to an organic anti-inflammatory diet.
One year ago, Taylor was flat on her back with both legs swollen from the thigh to her toes, and her knees and ankles in debilitating pain. She used crutches to walk, when she could walk. Five doctors and dozens of medical tests later, she still wasn’t getting better or given a medical protocol to heal. In fact, the rheumatoid arthritis specialist told her: “The tests are inconclusive, but something’s cooking. Come back when you’re in worse pain and we’ll put you on steroids.”
Taylor said, “The doctor might as well have told me to come back and he’ll make my life a living hell. Whenever I’ve taken steroids for poison ivy outbreaks, it was a case of the cure being worse than the disease. I was facing a future of harsh drugs, and worsening pain, health, and quality of life.”
Then, at the recommendation of a friend, she went to an acupuncturist, who was also a nutritionist specializing in autoimmune disease. “She changed my diet—and my life,” said Taylor. “Now I don’t eat wheat, genetically modified foods like corn and soy, processed foods, fast food, or any other junk food. I only eat organic anti-inflammatory foods.
“Within six months of gradually changing my diet, I was out of pain and walking again,” said Taylor. “Now I want to share my miraculous recovery with everyone who is suffering from inflammation or who wants to prevent it. That’s why I’ve started my blog and it’s why I’m writing two books, including an anti-inflammatory diet cookbook.”
In her research, Taylor learned that chronic systemic inflammation is one of the greatest threats to our health today. One major reason for this increase in inflammatory-related diseases, like diabetes, heart disease, and rheumatoid arthritis, according to a growing body of research, is the typical American diet of fast food, junk food, processed food, and food chemicals—which is spreading around the world.
