The recipe calls for 3 tablespoons of organic olive oil, 1 thinly sliced small onion, 1 large minced garlic clove, 1/3 cup of diced red peppers, 1/3 cup of diced green peppers, 1/3 cup of diced yellow peppers, ½ cup of diced zucchini, ½ cup of diced yellow squash, 1 cup of small sliced white mushrooms, ¼ cup of dry white wine, 1 tablespoon of fresh finely shredded basil, 1 tablespoon of chopped flat-leaf parsley, 5 large eggs, ¼ cup of light cream, 1 teaspoon of salt, ¼ teaspoon of freshly ground black pepper, 1 cup of shredded mozzarella cheese, 2 tablespoons of grated parmesan cheese, and 6 ounces of cooked, drained, and rinsed angel hair pasta tossed with 1 tablespoon of organic olive oil cooled to room temperature.
First, preheat the oven to 325°F. Generously grease a 9-inch, deep-dish pie plate. Heat the olive oil in a heavy large skillet over medium-high heat and add onion. Stir occasionally until softened for about 3-4 minutes and then add garlic. Stir in peppers, zucchini, and yellow squash and sauté until tender for about 3 minutes. Stir in mushrooms. Continue to cook while stirring for 3-4 minutes or until the mushrooms are cooked through. Add wine. Cook and stir until the wine evaporates and the mixture is dry. Then cool and stir in basil and parsley.
In a large bowl, beat eggs, cream, salt, and pepper until well blended. Stir in cheeses and mix in the cooled vegetable mixture. Stir in the pre-cooked pasta until the mixture is well combined. Pour the mixture into the prepared pie plate. Bake 30-40 minutes or until eggs are set. After, cool for 15 minutes and cut into wedges. This recipe yields 6-8 servings.
