Tuscan olive oil producer Bellucci Premium responds to an article published by the Olive Oil Times that discusses the growing trend amongst Italian pastry chefs to incorporate olive oil in their sweet treats.
In an article published by Olive Oil Times on January 6th titled “Olives Go Sweet,” the growing popularity of using olive oil in sweets like pastries and ice cream is discussed. Although some olive oils, like high quality extra virgin olive oil, offer a bitter taste, olive oil made from fully ripened olives can offer a sweeter and more delicate taste. Using these delicate olive oils in sweets has become more popular in innovative restaurants and ice cream parlors.
Chef Luca Montersino, founder of Golosidi Salute, says in the article that he uses extra virgin olive oil in his pastries instead of butter “to avoid lactose and animal fat.” Young pastry chef Pietro Macellaro uses all natural and organic products in his sweets, like almonds, chestnuts, armotic herbs, a variety of local fruits, and of course organic olive oil. The article states, “He uses extra virgin olive oil to make scrumptious chocolate cookies, and what he calls ‘half-dried black olives; to make a creamy ganache to fill dark chocolate pralines.”
Natalie Sexenian, the marketing manager for Tuscan olive oil producer Bellucci Premium, says, “Olive oil is an extremely versatile cooking and baking tool.
