Flavor Your Life Shares a Diet-Friendly Recipe for Marinated Grilled Shrimp with Roasted Red Pepper Dip Prepared with Italian Olive Oil

For the shrimp, this recipe requires:
¼ cup orange juice
2 tbsp. extra-virgin olive oil
¼ cup finely chopped Italian parsley
2 tbsp. scallions, finely chopped
2 tsp. Ponzu sauce (or soy sauce)
1 lg. clove garlic, minced
1 tsp. orange zest
½ tsp. dried oregano
½ tsp. salt
¼ tsp. freshly ground black pepper
1 lb. extra large or jumbo shrimp, peeled & deveined (about 24 shrimp)
For the roasted red pepper dip, the recipe requires:
1 cup (about 6 oz.) jarred roasted red peppers, drained
1 small clove of garlic
1 tbsp. extra-virgin olive oil
1 tbsp. chopped scallion
½ tsp. Smoked Spanish paprika
½ tsp. ground cumin
1 tsp. orange juice
2 oz. cream cheese cut into small pieces, softened
First, soak twelve 6-inch long bamboo skewers in water for about 20 minutes. Place all shrimp ingredients except for the shrimp a large zipper-style plastic freezer bag and shake for about fifteen seconds to combine. Place shrimp in the bag, seal, and shake to coat well with marinade. Then refrigerate 30-45 minutes.
Pre-heat the grill to a medium-high heat. Thread two shrimps onto each pre-soaked skewer. Grill for about 2-3 minutes per side or until pink and just cooked through. Serve warm with Roasted Red Pepper Dip and garnish with a sprinkle of additional chopped scallions, if desired.
For the dip, pulse the peppers and garlic in a food processor until finely chopped. Add remaining ingredients and process until mixture is smooth & well pureed.
