James Comprehensive Cancer Center.
Yael Vodovotz, PhD, a food scientist with The Ohio State University Department of Food Science and Technology, was challenged by researchers to create superfood-based products that could be used in their clinical trials. The products needed to retain high levels of bio-actives, be easy to store and use, and be available year-round.
To meet this challenge, the team at Ohio State University produced black raspberry gummy candies, and a concentrated fruit nectar. The candy and nectar were formulated using freeze-dried black raspberry powder supplied by Berri Products LLC. The company works directly with their partner farm to produce quality berries, and then uses the whole berry when making their powder, including the seeds and fiber. The ability of Berri Products to deliver a high-quality black raspberry powder using the whole berry allowed for researchers to better capture all of the nutrients of the berry in their formulations.
The black raspberry, grown primarily in Oregon, is prized by researchers for its high levels of anthocyanins and polyphenols. According to the Ohio State University Center for Clinical and Translational Science, "(black raspberries) have distinct antioxidant and anti-inflammatory properties that appear to inhibit tumor growth."
