Bleu Northeast Seafood, a new bistro located at 25 Cherry Street at the Courtyard Burlington Harbor Hotel, opens its doors to the Burlington community on Monday, April 14, 2014.

Celebrating the connection of Burlington and Lake Champlain to the sea, Bleu is Chef Doug Paine’s most recent venture that follows his success with Juniper at Hotel Vermont. Drawing influence from the New England coast, Canadian Maritimes and St. Lawrence region, Bleu’s menu showcases North Atlantic cuisine with a stunning selection of the region’s most seasonally available seafood.

“The inspiration for Bleu is simple, use the best ingredients possible to create a dish that will be remembered long after the food is gone. Many of the items on Bleu’s menu use classic ingredients with a unique approach for a redefined and relaxed seafood experience,” explains Chef Doug Paine, Executive Chef of Bleu.

“Our relationship with local purveyors and New England fisherman allow us to provide seafood that isn’t just fresh, it’s as fresh as can be. We get daily deliveries straight from the docks and change our menu based on what’s readily available and in season.”

A native Vermonter who was raised to appreciate the land, Paine is also excited to work alongside partners who are known for their sustainable practices.

“Not only are our ingredients fresh, but they’re caught or raised with the most sustainable practices possible. It’s my belief that a chef has the responsibility of finding ingredients that are grown responsibility and are good for the guests, the environment and the future generations of Vermont,” says Paine.

Located between Burlington’s historic Church Street and Lake Champlain, Bleu offers a welcoming atmosphere and sophisticated décor designed by Vermont architecture and interior design firm TruexCullins.

Owned and operated by Westport Hospitality, Bleu is open seven days a week for breakfast from 7:00-10:00am and dinner from 5:00-10:00pm with the kitchen closing at 9:00pm on Sundays. Complimentary valet parking will be provided for all dinner guests. The Bar at Bleu, open daily from 4:00-11:00pm, will feature live jazz music on the weekends and has been remodeled to provide an intimate ambiance in a polished setting overlooking Lake Champlain.
