Healthy Solutions Spice Blends Shrimp Scampi
Ingredients:
1 ½ lbs. Raw Shrimp
2 tbsp. Olive Oil
2 tbsp. Healthy Solutions Shrimp Scampi Spice Blend
2 tbsp. Water
½ cup White Wine or Cooking Sherry
12 oz. Noodles (cooked)
1 can (14 oz.) Petite Diced Tomatoes
Directions:
Place shrimp in a shallow bowl and sprinkle both sides of shrimp with seasoning. Add water and ¼ cup of wine, saving the remaining wine. Let stand while cooking noodles per package instructions. In a large saucepan, heat oil on medium heat. Add shrimp with liquid and sauté for 3-5 minutes or until shrimp has turned pink. Don’t overcook! Add tomatoes and remaining wine long enough to heat. (Adding the wine at the end enhances the flavor). Serve over cooked noodles.
