To help celebrate Cinco de Mayo, Chef Mac Arrington of has created a culinary delight—Lobster and Basil Tomato Gazpacho. This healthy favorite conjures up all the flavorful freshness of springtime.

Ingredients include 1 whole lobster, steamed and shelled (1 ¼ pounds); 4 heirloom tomatoes; 8 cherry tomatoes; ½ red bell pepper, roughly chopped; ½ orange bell pepper, roughly chopped; 1 teaspoon Jalapeno, seeded, minced; ½ cucumber, peeled, chopped; ¼ cup sherry vinegar; 1/8 cup white wine; ¼ cup basil, chiffonade; extra virgin olive oil to taste; salt and freshly ground black pepper to taste.

Working in batches blend heirloom tomatoes, peppers, jalapeno, cucumber, vinegar, wine and half of the basil until smooth. Season the soup during this process but not to 100%. Let the soup chill for 4-24 hours to develop its full flavor.

When it is time to eat, slice the cooked and chilled lobster tails into medallions. Split the claws in half or keep whole and break the leg meat up and set 4 even portions aside.

Bring a small pot of salted water to a boil. Set up a bowl of ice water on the side. Score the skin ever so slightly on the cherry tomatoes. Once the water has boiled place the cherry tomatoes in for 15 seconds, remove and immediately shock in ice water. Once the tomatoes have cooled carefully remove the skin and reserve them cold.

Portion the gazpacho into 2-4 bowls. Add 3-4 cherry tomatoes in lobster meat and drizzle with extra virgin olive oil, freshly ground black pepper and a touch of kosher salt. Add a few pieces of basil and enjoy!
