As a response to the bloating, weight gain, and overstuffed sensation that Cinco de Mayo celebrations often bring, Elana Horwich, founder of the Meal and a Spiel Cooking School of Beverly Hills, offers delicious Mexican food recipes that are blessings for the body, a.k.a. Horwich confronts the question, "So how do we eat Mexican food and indulge in margaritas without our bellies feeling like pinatas ready to bust open?" These recipes use select quality ingredients. They are assembled in simple ways - avoiding sauces, frying, and the use of excess ingredients - all of which make food hard to digest. Meal and a Spiel’s Oaxacan-style tlayudas are topped with a light black bean puree made with coconut oil and homemade easy guacamole. Horwich's extensive time spent in Latin America inspires the authentic flavor palate. The clean margarita has fresh lemon tartness and no added sugar and is based on a recipe Horwich learned as a bartender.
