All great barbecue begins with the right meat. Vice President Paul Schatte, of award winning Head Country Barbecue Sauce in Ponca City, Okla., offers his take on great barbecue. Schatte believes that all meat is not created equal, and he has a preference for aged beef.
“The finished product is only as good as what you start with,” Schatte said. “Ask your local butcher about buying aged beef. Get to know your butcher and seek his knowledge.”
Adding sauces to the meat can expand the flavor dimensions of a dish. Head Country produces many sauces to compliment any dish. The three staples are Original, Smokey and Hot. Another Oklahoma made sauce to check out is Daddy Hinkle’s Instant Meat Marinade.
