Hotel Phillips’ Culinary Team Awarded The Golden Fork

Executive Chef and Sous Chef Wins ‘Taste of Kansas City’ Culinary Competition

Hotel Phillips Executive Chef Justin Voldan and Sous Chef Himesh Zimba won the prestigious Golden Fork Award at the “2014 Taste of Kansas City” event on Thursday, May 22. The annual event was sponsored by The Pitch and benefited Big Brothers Big Sisters of Kansas City.

Voldan began working at Hotel Phillips, downtown Kansas City’s most elegant hotel, in 2011. He is responsible for catering all of the banquets and special events held at the hotel, as well as developing the menus for the hotel’s main restaurant, 12 Baltimore. This is the restaurant’s first Golden Fork Award under Voldan’s leadership.

The judging roster included journalist Charles Ferruzza, blogger and author David Hayden, and food blogger and cookbook author Emily Farris. Dishes were judged on taste, visual presentation and creativity.

Contenders were provided with a selection of ingredients to prepare one or two dishes. Ingredients included: pork rib, asparagus, potatoes, cilantro, tomatoes, onion, red wine vinegar, queso fresco, ginger and carrots.

Voldan and Zimba’s winning dish featured pan-seared marinated pork chops served with a potato cake flecked with fresh cilantro and an orange carrot puree.

Hotel Phillip’s culinary team competed against six other teams of talented chefs from restaurants across the Kansas City area, including Chaz on the Plaza, the Ambassador Hotel, Accurso’s Italian Restaurant, and others.

“The competition was very intense,” Voldan said. “The presentations created by the other chefs were beautiful. We are honored to win this recognition, but most importantly, it was wonderful to see our local talent come together to support a great cause, Big Brothers Big Sisters.”

Voldan plans to offer his winning pork chop dish as a future special at 12 Baltimore in Hotel Phillips.
