The Wave Kitchen & Bar at Costa d’Este Beach Resort is proud to announce the 2014 Summer Food & Wine Dinner Series. The three-dinner series debuts on July 31, with a salute to Italy. The following dinners include August 28th, that features a pairing of French wines and cuisine, and September 25th, which highlights California wines and cuisine. The dinners are $59 per person, exclusive of tax and gratuity. Limited seating is available and reservations are required.
“Chef’s Antonio Estremera and Omar Ocasio have outdone themselves again,” states Ed Riley, general manager. “Their culinary creativity and skills are highlighted in this menu that perfectly pairs and showcases the delicacies and flavor profiles of Italian wine and food."
The menu begins with a Pink Lady Apple & Gorgonzola Strudel with Pistachios Brown Butter paired with LaLuca Prosecco. Next comes the antipasto course with Fontina, Pecorino, Asiago and Salume Calabrese matched with Villa Campobello Chianti Reserva DOCG. The well-crafted menu continues with the Primo course of House-made basil gnocchi with spicy, yellow tomato and lamb sausage sauce. The wine for this course is Il Poggio Sangiovese Rubicone. Next comes the Secondo course with pan seared scallops with Florida grapefruit risotto and Piccata sauce paired with Villa Masetti Pinot Grigio. The special meal concludes with chocolate cannoli Neopolitan style with Blood orange coulis served with Ventura Blood Orange Orangecello.
