Camp Emerson Announces Expansion of Camper Food Allergy Program
Hinsdale, MA (PRWEB) January 09, 2015 -- Camp Emerson, a resident camp in Hinsdale, MA, announces the expansion of their food allergy program to include a team of full-time specially-trained dietitians, a separate kitchen area to prevent cross-contamination during food preparation, service, and storage, dedicated full-time allergy certified chefs, and gluten-free food preparation, storage, and cooking areas. The food service team is supported by a 24/7 medical staff who are experts in food allergy protocols.
Camp Emerson has long been considered the food allergy specialist among summer camps. This expansion of their already extensive program took place to meet the growing needs of school-aged children with food allergies. Camp Emerson has safely supported children with up to 9 anaphylactic allergies from all over the USA and the world. In the last 5 years, the number of children with food allergies at Camp Emerson has grown over 300%.
According to a study released in 2013 by the Centers for Disease Control and Prevention, food allergies among children increased approximately 50% between 1997 and 2011. Camp Emerson is equipped to handle children with severe and/or multiple life-threatening food allergies. According to Food Allergy Research and Education (FARE), eight foods account for 90% of all food-allergic reactions: milk, eggs, peanuts, tree nuts (e.g., walnuts, almonds, cashews, pistachios, pecans), wheat, soy, fish, and shellfish. Camp Emerson is completely peanut, tree nut, fish and shellfish free. In addition, Camp Emerson offers several dairy alternatives, a complete gluten-free menu, egg free alternatives, vegetarian and vegan options and the experience and flexibility to safely serve children with anaphylactic allergies. The foundation of Emerson’s success has been communication and planning with each individual family prior to the start of the camp season. In 2015, in addition to the expanded kitchen area, Camp Emerson will be sesame free and 100% of staff will be trained in the administration of epinephrine, should the need arise.
