Dr. Beavan will be one of the speakers in the Baking Technology track, at the upcoming seminar in August 2015. Dr. Beaven’s topic will be “Designing Clean Label Bakery Products - The Conversation Moves On!”.
Topics covered in Dr. Beavan’s presentation will review what has changed from last year in the packaged market and the food service market. Despite the recent push for clean label and GMO-labeled products consumers still repeat buy bakery products based on their organoleptic properties and, price, and what they believe it will do for them nutritionally. Food manufacturers and bakers can increase sales by launching new products that are both clean-label and appeal to the consumer’s desire for foods that taste great and have the texture they expect from traditional baked goods. Overall, the market for clean label is moving on, not only to replace ingredients, but also to include more variety in textures and flavors and more emphasis on health and wellness. Clean label means different things to different people. They can be short ingredient statements composed of recognizable words to longer statements composed of less common but still natural-sounding words. However clean labels are defined, they have to be, first and foremost, regulatory compliant, and the ingredients safe to eat. Furthermore, the product and the ingredients from which it is made have to be appealing; the consumer has to derive a benefit, either nutritional or spiritual, from eating the product, and it has to be affordable. This presentation will demonstrate new technologies to design bakery products combining basic ingredients with enzymes, gums, emulsifiers, shelf-life extenders and processing conditions to appeal to consumers whatever their concept of clean label. Natural mold inhibitors and clean label gluten-free baking will also be covered in this presentation.
