Lawer Estates Releases Their 2015 Rosé of Syrah To Pair With The Family’s Shellfish Ceviche Recipe This Spring
Calistoga, CA (PRWEB) March 08, 2016 -- Lawer Estates, a boutique winery in Calistoga, California, today released their 2015 Rosé of Syrah, a blush wine that is perfect for spring or summer. The Lawers, who hail from Alaska, released their new wine with their family’s homemade ‘Shellfish Ceviche’ recipe. The wine was created by the experienced Lawer Estates winemaking team of Cary Gott and Kelly Deianni.

Produced in the classic method for Rosé production, the winemakers press whole clusters of Syrah grapes and then ferment the clean juice at cool cellar temperature. This produces a beautiful wine with fresh fruit notes. On the palette the wine has a full richness of ripe fruit and a long lingering finish.
Shellfish Ceviche with Citrus and Watermelon Recipe (pairs with 2015 Lawer Estates Rosé of Syrah)
Ingredients:
1 tsp grated ginger
Juice of 1 lime
1 navel orange (peeled & chopped with juice)
2 scallions (finely chopped, white & light green parts only)
2 cups seedless watermelon (diced to small bite-sized pieces)
1 Tbs finely chopped fresh jalapeño (or to taste)
Pinch of salt
1 cup cooked, cooled mixed shellfish (scallops, shrimp, crab or halibut) cut to same size as watermelon, if large
12 (or so) Boston lettuce leaves
6 squash blossoms or nasturtium flowers for garnish
Instructions:
Mix first 4 ingredients in a bowl. Add watermelon, half of jalapeño and salt and stir gently. Season to taste with more jalapeño or salt, if required, then fold in seafood until well-combined. Divide ceviche between 6 parfait dishes lined with lettuce leaves (about 2 per dish) and garnish with flowers. Serve immediately.
