ALLENHURST, NJ (PRWEB) August 03, 2016 -- Marilyn Schlossbach has added the renowned Rumson, New Jersey restaurant, What’s Your Beef, to her current collection of restaurants, which include Langosta Lounge in Asbury Park and the Labrador Lounge in Normandy Beach to name but two. This is an exciting change for the restaurateur who has been working in the restaurant industry since 1982, for her other restaurants are located on or near the Jersey Shore and are chiefly seasonal operations.
“When Richard Santore of Bielat Santore & Company told me about What’s Your Beef I was interested for two reasons. The first reason was that we’ve wanted to try to balance the seasonality of our current restaurants and it’s been an interesting process trying to find that balance,” explained Schlossbach. For years she has been busiest during the months of July and August but once the autumn season comes around there is typically a decline in business. “It then becomes difficult to balance staff, personal life, and moral. Ultimately, I would like to have a more balanced life for my staff and for my family and owning off season restaurants will help me achieve this balance,” continued Schlossbach. “The second reason is that there are apartments on the second floor which generate additional income for us.”
Although What’s Your Beef has been in business since 1969 and has experienced decades of success, Schlossbach intends to renovate the premises and tweak the concept. In doing so, she hopes to time retain the many traditional aspects of the business that customers have come to love.
Exterior renovations are a long term goal anticipated for the spring of 2017. These renovations will include installing garden boxes and growing a mix of local annuals and edibles. “We really want to make a nice, welcoming outdoor area to attract customers during the warmer months as well,” she emphasized. “The atmosphere can be described as neighborhood hipster. It is so retro that it is hip. We are trying to preserve some of that character, the older yet modern feeling.”
There have already been changes in service to enhance the dining experience at the eatery. “Before you would just go up to the counter to order; but now we are working with the staff to train them for table service. It’s great because the staff that came with the restaurant when we bought it have committed to changes which is sometimes difficult and uncomfortable.”
There have also been some modifications to the menu. While steaks are still popular, the grade of meat has been elevated and there is now several seafood and vegetarian options which Schlossbach feels may warrant a name change. “A name change will likely come in the future for What’s Your Beef in the fall because I think we will have to. We don’t yet have a new name but we are brainstorming,” she explained.
The food enthusiast has always emphasized the importance of attaining the support of local farmers. Some of the menu changes were inspired by her love of farming and her interest in transforming What’s Your Beef into a “farm to table” restaurant. She is paying much attention to quality ingredients and sustainability. “We are using more locally sourced product. We are partnering with farms in Farmingdale, Asbury Park, getting local oysters from Mantoloking, and some products from the Navesink.”
There’s power in giving back to the community and Schlossbach makes it a priority to do so at all of her restaurants. What’s Your Beef now has a monthly community night where the restaurant partners with local businesses to feature their specialty items as well as a local charity. This month features the Cheese Cave in Red Bank and a previous event featured Sickles Market. An upcoming event in August will feature the Monmouth Conservation, which does a lot of work within the area focusing on land and beach preservation. Clean Ocean Action will be featured in September.
“We do this for two reasons; one is to support the good work of what is going on around us and the other is to let new people come in and see who we are and the commitment we have to our local communities on all levels.”
