Law requires canned food be heated to 121 °C (250 °F) to destroy microorganisms and inactivate enzymes, then vacuumed sealed to prevent any bacteria from getting in. According to the USDA, this process allows high-acid canned foods (fruits, tomatoes) to be stored for up to 1 ¹⁄₂ years, and low-acid canned good (vegetables, meat, fish) up to 5 years.
To ensure quality and safety standards are met, canning facilities rely on data loggers to monitor internal product temperature throughout food processing phases. In order get an accurate reading, the probe of the data logger needs to be placed in the center of the container where it takes the longest to reach the desire temperature. This can pose challenges to processors as it can be difficult to ensure probes stay in the exact position throughout the entire process. MadgeTech solved that problem for a wide audience with the design of the new CF200, which accommodates bendable, flexible and rigid probes of varied diameters and lengths.
The CF200 securely attaches MadgeTech HiTemp140 data loggers to jar lids, cans, retort packages, pouches and other sealed containers. The probe of the data logger can then be effortlessly inserted into the container to read the internal temperature while retaining its hermetic seal, and remain in the correct position throughout the entire production process. The stainless steel fixture can withstand temperatures as low as -40 °C to as high as 140 °C, making it the ideal solution for thermal food processing. The CF200 is compatible with the MadgeTech HiTemp140-2-TD, HiTemp140-5.25 HiTemp140-FP and HiTemp140-PT-5 data logger models.
