Milk consumption has been steadily declining over the past several decades and dairy companies are highly affected by this ongoing trend. Last year, 43 million gallons of surplus milk was reportedly dumped by U.S. dairy producers, according to a US Department of Agriculture report. While excess dairy can be caused by several factors, one pharmaceutical company CEO suggests high rates of lactose sensitivity play a role.
