However, before imploring about what the trick is, Engler says that one must know the different types of pasta that exist. There are basically 12 types of pasta noodles that can be commonly found in the market. Pappardelle, farfalle, shells, gnocchi, penne and angel hair are to name a few. Each has its own taste and preparation method. But as Engler points out, the basic procedure remains the same.
Pasta is primarily made of flour, which means if not prepared appropriately, it will remain chewy that can further ruin the taste of the otherwise simple dish. The first hack that most Italian moms swear by is boiling the pasta in hot water with salt and oil. While salt adds to the flavor, oil ensures that they don’t stick with each other once the boiling procedure is over. Some of the most celebrated chefs’ even advise to use beef or chicken or vegetable stock instead of water for that really gives the pasta a flavorful palate.
As for Engler, this not only adds taste to the pasta but gives it a fine and smooth texture. He also adds a variety of spices when boiling the noodles in the stock to make the dish even more flavorful.
Pasta is a dish that is loved by all, and Engler is no different. Sitting with a bowl of Mac N Cheese, sipping some wine and binge-watching Netflix is what he calls “life at its best”!
