Located in downtown Napa at the recently opened CIA at Copia, the latest expansion provides students the opportunity to host festivities and celebratory events all while engaging in hands-on learning about making the perfect olive oil, from harvesting to extraction and finally, production.
Colavita USA was founded in 1978 by John J Profaci along with Enrico and Leonardo Colavita and pioneered the first major brand of extra virgin olive oil in the US. The partnership with CIA became an additional platform to keep extra virgin olive oil and Italian heritage at the forefront of culinary education.
