Mexican Resort & Sister Collection to Participate in Worldwide Event on March 21st with Special Menus

The “Beyond All Inclusive, Beyond All Compare” Velas Resorts in Riviera Maya, Riviera Nayarit, Los Cabos and Puerto Vallarta participated in the 4th Annual Goût de France (Good France) on March 21st. Each resort featured dedicated menus in celebration of French gastronomy. Highlights of the dishes served include crispy tartlet of confit duck sweet bread with creamy mustard sauce a l’ancienne at Casa Velas. Bordelaise-style sea bass over leek fondue with potato straws and glazed shallots will be served at Velas Vallarta. Pork and oyster with white truffle essence in phyllo pastry, fine vegetable jus, mushroom duxelle and garlic purée will be served at Grand Velas Riviera Maya. Veal medallion scented with sage over celery root mousseline with caramelized lemon and extra virgin olive oil sauce and tapioca crisp with Niçoise olives at Grand Velas Los Cabos and Agen prunes macerated in Armagnac with caramelized apple compote, homemade yogurt and Sable Bretón crumble at Grand Velas Riviera Nayarit also on tap. Accompanied by French wines and champagnes, the five-course dining experience is complimentary for guests staying at the resorts.

For those who can’t make it to the resorts this month, Grand Velas Los Cabos shares its Perigourdine Sauce that works well to top beef tenderloin or duck at home.

Recipe (4 Servings):
¼ C Madeira Wine
1.7 oz Shallot, chopped
1 sprig Thyme
1.5 C     Veal Demi-Glace
2 pcs. Black Truffle, julienned
1.5 oz Foie Gras, cubed (optional)
Salt to taste
Pepper to taste

Bring the Madeira wine, shallot, and thyme to a boil in a medium sauce pan. Reduce to simmer and add demi-glace. Cook over low heat for ten minutes. Add the truffle and gently cook for 1 minute. If desired, stir foie gras into to the sauce. Season to taste and serve hot over beef tenderloin or duck breast.
