Following 2 successful crowdfunding campaigns via Kickstarter, Entrepreneur Michael Anderson has surpassed the funding goal on his 3rd project, with 2 weeks to go, by paying homage to his father’s hometown of Tampa Bay (Ybor City). It’s called “Crab Chilau” aka Crab Enchilado, a spicy crab stew served over spaghetti with a side of Cuban bread. This forgotten dish, known only to the natives of the Tampa Bay area, dates back to the 1920’s when the historic Ybor City district was bustling with life, culture and ethnic street food. Introduced by Cuban immigrants and further influenced by Italian, Spanish and Tampa's African American community, Chilau is as identifiable with Tampa as Gumbo in New Orleans. Michael’s version is a concentrated seafood condiment which he describes as bold low-country/gulf-coast flavor with plenty onion, bell pepper, celery, garlic and a spicy kick of cayenne pepper.
