Detroit Style Pizza Co. Improves upon Popular Gluten-Free Pizza

Detroit Style Pizza Co. has made its already-popular gluten-free pizza even better by partnering with Westwind Milling Co., which will now supply all gluten-free flour to the pizzeria. The flour will be custom-blended and stone-milled with only fresh, certified organic and GMO-free Michigan-grown grains according to Detroit Style Pizza Co. President and World Champion Pizza Maker Shawn Randazzo's unique gluten-free recipe.

Randazzo crafted his gluten-free pizza recipe when his wife, Keri, was diagnosed with celiac disease in 2012. The couple sampled gluten-free pizzas from numerous restaurants, but were dissatisfied with the thin, papery crusts that tasted like styrofoam. Thus, Randazzo set out on a quest to create a gluten-free pizza recipe that rivaled the flavor of his Detroit Style Pizza, which was named World's Best Pizza at the 2012 International Pizza Expo in Las Vegas.

Westwind Milling Co.'s Michigan-grown grains are certified organic, free from pesticides and synthetic fertilizers, GMO-free and pollution-free. Once harvested, they're stone-milled within two days and delivered to Detroit Style Pizza Co.'s three Metro Detroit locations the next day.

By sourcing from Westwind Milling Co., located in Linden, MI, about an hour outside of Detroit, Detroit Style Pizza Co. adds gluten-free flour to its list of Michigan-grown ingredients, which include all produce and salads.

People with celiac disease, gluten allergy and gluten sensitivity make a lifelong commitment to restrict dietary intake of gluten, a protein present in wheat, barley and rye. It has been estimated that one in every 133 people have celiac disease, and that more than 20 million people in the United States – or seven percent of the entire population – suffer from gluten sensitivity.

Traditional bread products such as pizza dough contain gluten, and many have struggled – and failed – to develop a gluten-free pizza dough recipe that tastes as good as the "real deal." Randazzo's recipe employs grains such as white rice, corn and tapioca in a custom blend for gluten-free pizza that rivals the taste and texture of his award-winning Detroit Style Pizza.

In addition to using only gluten-free ingredients, Detroit Style Pizza Co. takes special care to eliminate the risk of gluten contamination by designating separate gluten-free food prep stations, utensils and pans for baking gluten-free Detroit Style Pizza. Randazzo also personally trains his pizza chefs to properly prepare gluten-free pizza.
