According to a January 20th Fox News article titled “Organic food shortage hits US,” many people make the decision to eat healthier after the New Year. Typically, this leads to an increase in demand for organic food and naturally made meals. The increase in demand has led to a nationwide shortage, the article says. However, demand is not the only reason for this decrease in supply. The article says inclement weather, such as the drought in the Southwest also contributed to a less than normal supply of organic food.
Organic eggs, cucumbers, and berries are the hardest hit, according to the article. Many supermarkets have been selling out of these items and drive the prices up when they are in stock. It’s a classic case of supply and demand. Organic berries have seen prices as high as double digits, the article says.
A representative from Colle Farmers Market, an organic food advocate, says that the shortage of organic food is a sign that the demand is high and more farmers should be switching to organic processes. “More and more people are turning to organic food, especially in the beginning of the year,” the Colle rep says. “This surge in demand and bad weather no doubt led to a shortage. This shortage will surely prompt some farmers to switch to organic processes. They should recognize the need for organic products and make the change to ensure the country does not experience another shortage.“
The Colle representative expects the demand for organic to continue to increase, “I think this signifies the importance of organic food for a healthy lifestyle and that more people are starting to eat organic. This increase in demand is a very promising sign for the future of organic farming, and the future of organic food.”
