Science has proven, once and for all, that kids need to listen to their mothers—at least when she's telling them to chew their food. In the latest blog from Healthfill.com dated July 18, 2013 and titled,“Chew Your Food Thoroughly for Maximum Nutrient Absorption,” guest blogger Liz Ernst shares highlights from a Purdue University study on the relationship between chewing food and nutrient absorption.
The study, completed earlier this month and featured in a January 15, 2013 Science Daily article titled "Chew More to Retain More Energy," describes how chewing food thoroughly helps the body retain more nutrients than poorly chewed food. A group of researchers led by Richard Mattes, PhD, Distinguished Professor of Nutrition Science at Purdue, measured the nutrient retention in participants who were asked to chew almonds 10, 25, or 40 times before swallowing. After the almonds were consumed, fecal tests revealed that participants who chewed more retained more nutrients from the almonds than those who chewed less.
The results proved to researchers that chewing plays an integral role in the process of gleaning nutrition and energy from the foods people eat; chewing breaks down food, making it better able to release its nutrients so the body can more readily absorb them.
"Particle size [affects the] bioaccessibility of the energy of the food that is being consumed," says Richard Mattes, PhD, Distinguished Professor of Nutrition Science at Purdue. "The more you chew, the the more nutrients are retained in the body."
The Purdue study is part of a growing body of knowledge on the digestibility of plant-based foods and ingredients that could contribute to more appropriate energy values, and more accurate product labeling.
