Just in time for the holiday season, the celebrated paleo and gluten-free advocate Tina Turbin has contributed a tasty, gluten-free chocolate chip cookie recipe for Honeyville’s new Organic Quinoa Flour product for sale at Costco stores throughout the northwest region of the US, with intentions to branch out in the near future.

Tina was diagnosed with celiac disease many years ago and has experienced many positive changes since eliminating gluten from her diet and following what she calls a “paleo-ish” diet. She has authored dozens of eBooks and hundreds of articles spreading the word about the paleo lifestyle as a way to take control of one’s health and lose weight.
Quinoa, a grain-like seed originating in the Andes, is known for its high protein content and rich, nutty flavor. It is becoming increasingly popular as a substitute for rice and other grains, and its flour is often used in gluten-free baking. Out of a desire to offer a wider selection of healthier grains to its customers, Costco teamed up with Honeyville, a leader in baking, to introduce a new product, a 4-pound bag of quinoa flour. On the back of the package, Costco wanted to feature a gluten-free recipe, so Honeyville reached out to Tina, who has been providing paleo and gluten-free recipes to the company for quite some time.
Tina created multiple quinoa recipes utilizing many of Honeyville’s other products in the ingredients. Honeyville spent about a week in their testing kitchens trying each of Tina’s recipes. They enjoyed all the recipes she contributed, but her “Rich and Chewy Chocolate Chip Cookies” were the clear winner with rave reviews.
