Our customers no longer have to worry about running into overcooking anything ever again.

Acknowledging that home delivered meals invariably get reheated in a microwave oven, Eat Well Foods has just implemented a unique method of meal preparation, employing sous vide machines.

Lliterally translated, sous vide means "under vacuum" All poultry and seafood portions are now individually vacuum-sealed with their seasonings and sauces inside the bag, and then placed in a temperature-controlled water bath.

"The result of the sous vide process is the creation of perfectly moist, perfectly cooked meats, particularly those which are sensitive to microwave reheating.  Our customers no longer have to worry about running into overcooking anything ever again," says Mark Lew, owner and head chef of Eat Well Foods.  "The results of this method have surpassed our expectations in flavor and consistency, and we're sure our customers will be delighted."

Because the water temperature is controlled in the machine with precision, whatever is immersed in the water will achieve the same temperature as the water through and through, given enough time.  As a result, the method is time-consuming and requires additional steps in the bringing a meal to completion.  "I wasn't sure that this approach was going to be worth the added cost in time and labor, but now that we've finished running our tests, I can only say that the difference in the flavors is inestimable," Mr. Lew adds.

Eat Well Foods delivers fresh, made-from-scratch natural and organic meals that conform to the American Heart Association's guidelines for healthy eating.
