Bottega Louie Gourmet Market Expands Their Offerings with Menu Item Developed by The Gilkey Restaurant Consulting Group

Bottega Louie is a 10,000 square foot Italian Restaurant, French Patisserie and Gourmet Market located in the historic 1912 Beaux Arts Brockman building on Grand and 7th in the rejuvenated downtown Los Angeles core. Amid the gleaming white marble, white walls, brass trim and floor-to-ceiling windows is an immense market filled with authentic French pastries, artesian breads, Bottega’s iconic colorful macarons, sweet éclairs, beignets and a new line for the Gourmet Market created by the Gilkey group’s chefs.
Previously TGRCG designed and opened the restaurant’s off-site commissary as well as developed some of the most popular dishes on the Bottega Louie menu. This time the Gilkey chef’s research and development team joined forces with the Bottega Louie team to expand the menu of the trendy Gourmet Market at the entrance of Bottega Louie’s Italian Restaurant. The Gourmet Market includes salads, cheeses, salamis and specialty items. Some of the tasty new items developed by the Gilkey chef team include savory éclairs, tea sandwiches and club sandwiches, all beautifully packaged and ready for take-out. TGRCG’s 30 years of experience in the food industry makes them the ideal food developers. When developing innovative food offerings the Gilkey chef’s approach is to focus on creating food with integrity, made from scratch and from fresh, local ingredients.
In addition to the above The Gilkey Group assisted in creating a line of proprietary bottled pasta sauces, extra virgin olive oils, pastas and jams. All of these are also available at the Bottega Louie Gourmet Market. Available for take-out or boxed as a gift, the pasta sauces have been a huge success.
Bottega Louie’s menu includes homemade soups, generous salads made with fresh ingredients, thin-crusted pizzas, steaming housemade pastas, roasted beets with goat cheese or heirloom tomatoes with burrata small plates, entrees such as grilled rib-eye with Gorgonzola sauce and delicious desserts such as Chocolate Soufflé, Butterscotch Budino or Affogato. The menu includes a full selection of California and Italian wines offered by the bottle or glass. Patrons flock to the smart, stylish eatery known for its energized environment to enjoy Italian standards from pizza margherita to eggplant Parmesan, which the kitchen pulls off with an elegant attention to detail. TGRCG has led several projects for the Bottega Louie executive team. Initially the TGRCG relocated their prepared foods production from the restaurant to a newly leased commissary. The Gilkey Group designed the space as well as coordinated the equipment move and retrained the operations during the launch. Bottega Louie has since tripled their food production and sales. TGRCG has also worked side-by-side with the Bottega Louie Chef team to standardize and memorialize their recipe procedures. This included the finalization of a master recipe manual.
TGRCG specializes in supporting restaurants in recipe-costing, creating databases and theoretical food cost reports. This enables restaurateurs to accurately price their menus and ultimately lower food costs and increase profits.
