Guests will embark on a culinary journey as the perfect summer bounty is prepared using organic fruits and vegetables harvested at their peak. Savory items include grapefruit lime scallop ceviche, grilled summer veggies, house-made pappardelle pasta with a white wine tomato stew and a mix of chanterelle mushrooms and summer truffles, smoked butter-poached scallops, fresh corn polenta, roasted beets, and a roasted corn, fava bean and morel ragout.

Chef Sundeen presents fresh seafood sourced from the Pacific Northwest. Delicacies for the evening include cedar plank salmon a raw bar with crab, lobster and oysters, clams and mussels, and lamb chorizo. Accompaniments include bruleed figs, a foraged mushrooms medley, smoked charcoal potatoes, and cream braised fennel.
Each Food & Wine Experiences is held on The Dana Lawn from 6 to 9 p.m. These special dining events are $150 per person, inclusive of tax and gratuity and reservations can be made by calling Resort Services at 949-240-2000.
