Founded in 2020 by Christine Hopkins with the support of her co-founder and husband, Stephen Hopkins, Portland's Aimsir Distilling is an invitation to all to celebrate the extraordinary in everyday moments. Aimsir's award-winning spirits are batch-distilled and can be found at liquor stores throughout Oregon and Washington and at Aimsir's all-ages restaurant and bar, the Emerald Room, in Northeast Portland.
"We're honored to be nominated for Best New Craft Distillery," said Aimsir founder Christine Hopkins. "Our team works really hard to produce delicious, award-winning spirits and create beautiful, well-executed cocktails and guest experiences. I'm proud of what we've been able to do to earn this recognition."
This year, Aimsir has released two new products: a seasonal Rosé Gin that sold out in four weeks, and Vaettir Aquavit, a balanced expression of the bold anise and caraway flavors most commonly associated with Aquavit and balances them with citrus undertones and a lightly floral finish. Later this year, Aimsir plans to release its third new product, Astrid Vodka. A quadruple distilled vodka. Aimsir has won many awards for its world-class spirits and packaging, most recently winning three awards by the American Distilling Institute in its 2022 International Spirits Competition (Best of Category – Bottled & Blended Spirit – Flavored Whiskey, Silver Medal: Cold Brew Bourbon, Silver Medal – Bottled & Blended Spirit: Straight Bourbon Whiskey, Bronze Medal Excellence in Packaging: Cold Brew Bourbon).
Aimsir spirits can be found at liquor stores in Oregon and Washington, select bars in Portland, and at the Emerald Room at Aimsir Distilling at 2117 NE Oregon St. Suite 202. Vote for Aimsir as Best New Craft Distillery here.
