But a new white paper from Azuca, an award-winning applied bioscience company known for fast-acting cannabinoid innovation, argues that particle size alone does not tell manufacturers whether an infused gummy will taste good, hold up through production and shelf life, or deliver a consistent consumer experience.
The paper, Beyond Nano: A Performance-First Framework for Fast-Acting Cannabis Gummies, asserts that "nano" has become an overused shorthand for edible performance. Particle size can be an important characteristic of an infusion system, but it does not by itself establish how a finished gummy will perform. Also, delivery-system evidence does not necessarily transfer across product formats. Azuca argues manufacturers should also evaluate efficacy, taste, stability, scalability, recipe integrity and the consistency of the consumer experience.
How Nano Emulsions Undermine Gummy Performance:
Rather than focusing on a single technical characteristic, the whitepaper sorts those factors into a performance-first framework built on four pillars: consumer experience, product quality, manufacturing performance and scientific validation.
Particle size is one characteristic of an infusion system, but it doesn't tell manufacturers the key determinations for how a system will ultimately perform in a gummy, including factors such as:
- What form the infusion arrives in: Most nano-emulsions are largely water-based, which means water is introduced near the end of the cook. That can shift water activity, solids balance, drying time and ultimately texture.
- How much surfactant comes with it: Emulsions rely on surfactants to remain stable. Those ingredients can contribute bitterness or off-notes, creating additional formulation work around taste.
- Whether it survives the manufacturing process: Gummies are acidic, high-solids, heated systems. Emulsions that are stable in water can coalesce, cream or ripen under those conditions. The number on an emulsion spec sheet describes the droplet in the bottle, not what is retained in the gummy.
- Whether it stays stable through shelf life: Particle size is measured at the supplier, while potency loss, seepage and texture drift can emerge months later during transportation, warehousing, packaging and retail.
- What it does to the production line: Nano-emulsions can require high-shear equipment, high-pressure homogenizers, microfluidizers or sonicators that most gummy manufacturers do not own, adding operational complexity and affecting yield, throughput and drying time.
The point is not that nano-emulsions are unsophisticated. It is that gummies demand more than a small particle. Performance has to survive the recipe, the process, the shelf life and, ultimately, the consumer.
Consumers Respond:
On the consumer side, an independent, blind panel compared an Azuca gummy made with TiME INFUSION® against a professionally formulated nano-emulsion gummy in the same flavor and dose.
