A bagel and cream cheese might be traditional but it's not the only way to go. According to Spieler, a bagel pairs well with French cheese, "Probably my favorite is Camembert, a really ripe one, spread very thickly on top of a toasted everything bagel with a cup of dark roast coffee is such a treat." Another way to upgrade your bagel and cream cheese is with a slice of Comté. Says Spieler, "Because Comté is so good melted, sometimes I take half a bagel, spread thickly with cream cheese, sprinkle with green onion, top with a slice of Comte and let it melt under the broiler."
Breakfast Cheeseboard
Cookbook author Tia Keenan also loves cheese for breakfast, "I like to eat a cheese plate in the morning, when the day seems so full of possibility, and the body craves something fortifying to start the day." At home she particularly likes serving cheese for brunch. "I'll put a cheese board out and instead of serving charcuterie I'll serve typical breakfast meats like bacon and sausage alongside it. Warm biscuits are the perfect pockets for everyone's favorite cheeses and meats." Great breakfast cheeseboard selections include soft cheeses like Brie and harder ones like Mimolette. If you are looking for a dish to serve a larger group, a Brie and ham quiche is the perfect choice, especially with a side of fresh seasonal fruits.
Breakfast Sandwiches
Skip the ordinary breakfast sandwich and try a Croque Monsieur or a Croque Madame. These knife and fork sandwiches are a classic French bistro meal or snack that just happen to include many breakfast favorites. The Croque Monsieur is a toasted ham and cheese sandwich made with Emmental cheese, while the Croque Madame is the same thing, only topped with a fried egg. Another great fork and knife breakfast sandwich is the Monte Cristo. It's basically a Croque Monsieur, but made with French toast rather than plain bread, and sometimes dusted in powdered sugar and served with jam.
Breakfast Fondue
The easiest fondue requires no pot and no wine, it's a baked round of cheese, perfect for dunking other breakfast favorites into, such as toast, breakfast potatoes, and sausage links. Says Keenan, "I love to bake a wheel of Camembert for breakfast. It feels so fancy! But it only takes fifteen or so minutes to bake it, and all you need to complete your most important meal of the day is some warm baguette! How could you not feel special starting the day that way?"
