Ricotta Mashed Potatoes with Fresh Herbs
Ingredients:
- 4 Yukon Gold potatoes, peeled and cut into chunks
- 1/2 cup Galbani Ricotta Cheese
- 1/4 cup heavy cream
- 2 tbsp salted butter
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tsp fresh thyme, chopped
- Salt and black pepper to taste
- 1-2 tbsp of additional melted butter on top
Instructions:
- Place the potatoes into a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until potatoes are fork-tender. Drain the water and return the potatoes to the pot.
- Stir in the ricotta cheese, butter, and olive oil. Mix together until fully incorporated.
- Pour in the heavy cream, garlic, herbs, and salt and pepper.
- Using a potato masher, mash the potatoes until completely smooth.
