The new dining experience is conveniently located at 15th and California Streets, along the bustling corridor that leads to the Colorado Convention Center and the Denver Theater District.
Assembly Hall is the central hub of the expansive Hyatt Regency Denver lobby, perfect for working, relaxing and socializing. The focal point of the new restaurant is two center island bars that are connected with a functional art piece featuring landscapes of the Denver skyline at sunset. Large windows, more than 60 feet high, embrace Denver's natural light and the urban side of the city in an intriguing juxtaposition.
The restaurant's design features modern countertops that dazzle atop a sleek island bar with comfortable seating facing a vast selection of tap beer, wine and spirits. Tables are designed for connecting in a matter that fits the guests' need, whether it's with a colleague sipping a cocktail or with a digital workspace for completing a timely project on the fly, while large screen televisions deliver the latest updates. Sparkling glass cases display an array of fresh pastries and even grab and go favorites, complementing the menu that is an eclectic collection of just about everything from a handcrafted beverage to a quick bite or larger shared plates. Specialty items include Devils on Horseback, Bacon Wrapped Dates and Apricots with Cherry Agridolce and Steamed Mussels with Hefewelsen Shellfish Broth, Garlic and Crispy Bread. There is also a selection of salads, hot and cold out-of-the-ordinary dishes such as Steak Tostadas and Grilled Pueblo Chili Pimento Cheese served with Buttermilk Bread and Smoked Tomato Fondue. Diners top off their experience with a regionally sourced cocktail or a homemade dessert.

For gatherings, a new hospitality lounge, The Retreat, is located adjacent to Assembly Hall, separated by a structural screen made of local pine and glass. The private space features a communal table and a variety of seating for meetings and informal dining.
Assembly Hall Bar + Market echoes the theme of the hotel's new, nearby lobby-level Former Saint Craft Kitchen and Taps. Former Saint's historic location is on the site where St. Mary's Academy once stood in 1864. This innovative restaurant gives a nod to the bond between food and spirits.
