Jacksonville, FL (PRWEB) December 18, 2013 -- Lakeview Health, a Florida-based drug and alcohol rehab center, has hired Chef Marco Grave de Peralta as Director of Food Services. Chef Marco is a recognized expert in this expanding culinary discipline and has worked to develop other recovery-focused menus for addiction treatment centers nationally. This marks the latest expansion by Lakeview Health under its new leadership in 2013.
The role of diet in recovery is quickly becoming considered a key component in helping the body return to a balanced state in the early stages of detox and withdrawal. Recipes focus on the concept of “scratch cooking,” which encourages the use of fresh ingredients and either limit or avoid the use of pre-packaged ingredients. Lakeview Health is taking this concept a step further by integrating culinary-based capabilities into their program, which will help patients continue healthy eating after graduation. These include plans for a teaching kitchen where patients will learn menu planning and the cooking skills to create meals similar to the ones crafted by Chef Marco.

About Chef Marco Grave de Peralta
Chef Marco Grave de Peralta is a graduate from the Culinary Institute of America and has more than 20 years of experience in culinary arts and dietary services. He most recently served as Director of Dietary Services at The Pavilion and The Farley Center at Williamsburg Place. Chef Marco was also the Executive Pastry Chef for PGA National in Palm Beach Gardens, Florida, and owner of the restaurant The General Store in New Jersey. He has also worked with specialty groups, including adolescent diabetic campers at Camp Nejeda in New Jersey and older adults at Windsormeade, a retirement community in Williamsburg, Virginia.
