Their first range offerings include a collection of nine expressions with age statements up to 30 years old, sourced from four different Japanese distilleries across the provinces of Niigata and Okinawa.
Shibui Japanese Whisky is the only single brand range of whiskies crafted from multiple award-winning Japanese whisky distilleries. The team has worked to make innovation and transparency a foundation of their mission to bring the best aged whisky statements to craft whisky lovers and connoisseurs alike. In our sample room, we have over 1,400 world whiskies including hundreds of cask samples from Japan. And this doesn't take into consideration our tastings with dozens of distilleries during our team visits to Japan. Barrels over BS
The relationships we have cultivated within the Japanese distillery world reflect our core belief that barrels make all the difference - everything else is just noise and marketing! Our expressions, which have 100% natural coloring, are divided into two ranges, the Niigata Range and the Okinawa Range. Because the maturation process accounts for up to 80% of the final flavor of all whiskies, we embrace all cask types to deliver the best in flavor for Shibui.

It's a fact. For our expressions, we blend our Japanese whiskies from Niigata with mature whisky from the lowlands of Scotland. This unique marriage of world whiskies rounds out the flavor profile for our Grain Select and our Pure Malts. Did we just become best friends?
Our Distilleries
We have partnerships with four outstanding Japanese whisky distilleries. They include 3 distilleries in Okinawa; Shinzato Shunzo, Kumensen and Masahiro. The fourth distillery we source from is a highly acclaimed distillery in Niigata.
Shibui Whisky Team
Lauren & Rachel Simmons are sisters who know the world of wines and spirits intimately; having over 35 years' experience combined across the industry. As owners of IND Beverages, they brought in Nicholas M. Pollacchi as their whisky consultant to help steer Shibui and launch an exceptional range of Japanese whiskies into the U.S.
Eastern whisky brands they have worked on include Yamazaki, Nikka and Kavalan. All three have also worked on an enormous portfolio of world whisky brands including Woodford Reserve, Glendronach, Dalmore, Macallan, and Balvenie to name but a few.
Pollacchi heads up The Whisky Dog, consulting with hundreds of spirit brands and has been a contributor on CNBC for rare whisky as an alternative investment. He is also honored as a Scotch Whisky Keeper of the Quaich and has a vast amount of experience, rounding out the Shibui nosing and tasting team, making them an exceptional authority on whisky, cask procurement, and flavor.
