It will take place from 8:30 am to 5:00 pm at Organic Products Trading Company, at 4018 NE 112th Ave D-8, in Vancouver, WA.
The Roaster Session will be a one day intensive workshop with an introduction to green coffee, basic cupping, dynamics of roasting, blending basics, the practice of roasting green coffee in your own business, and conclude with a comparative cupping and Q&A. The day-long sessions begin with an introduction to green coffee, including the importance of maintaining a clear chain of custody from seed to cup. Participants will learn basic cupping terms and protocol. Comparative cupping will be performed to demonstrate aromatics, body, acidity, balance, and sweetness using coffees that are representative of each of those characteristics. The group will discuss "why we cup," quality control, product development, roast profile, and other topics.
In the afternoon, workshop participants will tackle the dynamics of roasting including basic heat exchange and coffee transformation. This part of the workshop introduces the roast process through a hands-on roaster demonstration of a single origin bean with three different profiles (light, medium and dark). Attendees will learn blending basics and cupping will be performed with several profiled coffees, including a discussion of the management of chlorogenic acids, Maillard reaction, first crack, second crack and dry distillation.
