ATAGO to Show Brix/Total Acidity Meters at Unified Wine and Grape Symposium 2016
Bellevue, WA (PRWEB) January 20, 2016 -- ATAGO U.S.A., Inc. will be presenting a variety of different instruments this year at the Unified Wine and Grape Symposium in Sacramento, California. They will be featuring their recent innovation, the PAL-BX/ACID series of Brix/Acidity meters. While the series contains several units calibrated for different samples – 16 in total – the featured unit at the Unified Wine and Grape Symposium will be the PAL-BX/ACID 2 for Grapes and Wine Must.
The units measure Brix through refractometry and Total Acidity through conductivity. These measurements alone or in tandem with pH can present a clear flavor profile analysis for wine, fruits, beer, vinegar, and more.
When it comes to wine, it is indispensable to measure Brix, a measurement based on percentage of sugar of the wine must. Varying measurements will change fermentation times and the final taste. The Total Acidity is just as important, as different acidity percentages will greatly change the flavor of the wine. Unlike a pH measurement, which is a logarithmic measurement representing free hydrogen ions, the PAL-BX/ACID instrument measures all acids in a sample, or "Total Acidity." This measurement can also be derived through titration, a quantitative chemical analysis utilizing a reagent to determine acid content, though the titration method can prove to be complex and subjective.
The PAL-BX/ACID series can also take the Brix and Total Acidity measurement and represent them as a “Sugar/Acidity Ratio.” This ratio is the best representation of relative “sweetness” of a sample.
