Barn Joo, the Korean-Inspired Gastropub in Flatiron District in New York, Announces 'Garden Pancake,' an Avant-garde Interpretation of the Traditional Korean Pancake

The new Garden Pancake Korean pancake wrap topped with mushrooms, Union Square Market greens and scallion salad seasoned with red chili] is a modern interpretation of the traditional Korean dish, Pajeon. Barn Joo’s Garden Pancake or 'Ssam Jeon' is a unique tapas dish that utilizes Pajeon as a pita to marry the flavor of the salad topping.
Pajeon is commonly referred to as a Korean pancake amongst the restaurant and dining community. The pancake dish typically consists of primary ingredients such as eggs, wheat flour, rice flour, and scallion. Pajeon has a crispy texture on its exterior edges while the inside retains a soft and chewy finish.
Barn Joo believes that Pajeon would serve as an excellent flatbread for assembling a wrap as exemplified in our Garden Pancake. The Garden Pancake is intended to be eaten as a wrap, as recommended by Barn Joo’s Executive Chef David Lee.
In traditional Pajeon, it is common for the vegetable toppings to be fried into the batter of the pancake. But with the Garden Pancake, it is topped with Union Square Market greens, mushrooms, and scallion salad seasoned with red chili, and served as toppings of a wrap. The salad is seasoned with a spicy soy sauce that is strongly influenced by the taste of the dipping sauces that are often consumed with Korean Jeon (fried pancake dishes).
The concept of The Garden Pancake as a Pajeon wrap draws references from the Mediterranean-styled pita flatbreads. The crispy and crunchy Pajeon serves as the flatbread of a wrap that is topped with a savory salad. The usage of toppings accompanied by a flavorful sauce of our Garden Pancake is influenced by Italian pizzas.
