At The Butterfly in Tribeca and Marea in Midtown West, Chef Michael White collaborated with Freeman to create the Trickle Back. This is an olive oil spin to ‘pickleback,’ a shot that includes chasing a shot of whisky with pickle juice. The article details the preparation of the pickleback, which starts off with mixing chili brine with Bombay Sapphire gin. “The gin floats to the top, creating the shot and chaser in one glass. On top, he adds a few drops of olive oil, and then carefully adds some shaved Parmesan cheese, which combines with the olive oil, rather than sinking to the bottom.” The shot is a flood of flavors and the olive oil is a delicious addition.
