Oklahoma City, Ok (PRWEB) October 01, 2014 -- Settle into fall with a cozy sweater, a hot cup of coffee, and a Made in Oklahoma Coalition breakfast recipe. Whether you are a new to cooking or a cordon-bleu, MIO has created three new easy to make recipes just in time for the fall season.
The Made in Oklahoma Coalition recipes offer delicious dining ideas while promoting the brands manufactured in the state. For these unique recipes, M.I.O. has partnered five Oklahoma based member companies to help prepare this family meal: Shawnee Mills, Andrew’s Honey Bees, Hiland Dairy, Griffin, and Garden Club.
Cheesy Breakfast Pie
5 eggs, beaten
¼ cup Shawnee Mills All-Purpose Flour
8 oz. Hiland Small Curd Cottage Cheese
1 (4 oz.) can chopped green chiles
2 tbsp. melted Hiland Butter
½ tsp. baking powder
2 cups shredded Hiland Hot Pepper Jack Cheese
1. Preheat oven to 400 degrees. In a mixing bowl, combine eggs, flour, cottage cheese and green chills.
2. Beat well at medium speed with electric mixer.
3. Stir in remaining ingredients and pour into a well-greased, 9-inch pie plate.
4. Bake for 10 minutes at 400 degrees, and then reduce oven temperature to 350 degrees and bake 20 to 22 minutes longer, or until set.
5. Cut into wedges for serving. Enjoy!
Kitchen Kimberley’s Tips: To make your morning even easier, prepare this pie the night before; cover and refrigerate, then bake it in the morning. Be sure to allow the dish to come to room temperature before putting it into the hot oven.
Serving Suggestions: Serve Cheesy Breakfast Pie with Head Country Salsa on the side. Serve with plenty of JC Potter Sausage links, and Shawnee Mills muffins for a delicious Oklahoma Breakfast.
Cornmeal Pancakes
2/3 cup Shawnee Mills Yellow Cornmeal
1/3 cup Shawnee Mills Best All-Purpose Flour
1 teaspoon baking powder
1 tablespoon sugar
½ teaspoon salt
1 cup Hiland Milk
1 large egg, slightly beaten
2 tablespoons Andrew Honey Bees Cinnamon Cream Honey
3 tablespoons Hiland Unsalted Butter, melted
1 cup Griffin’s Original Syrup
1. Sift all dry ingredients in a bowl. Add milk, egg, honey and butter, stirring until just combined.
2. Pour by ¼ cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes.
3. Cook until the other side is golden brown.
Serve pancakes with additional Hiland Butter and Griffn’s Syrup.
Jam-Swirled Coffee Cake
Cake:
½ cup Hiland Unsalted Butter, softened
1 cup sugar
1 teaspoon Griffin’s Vanilla
2 large eggs
2 cups Shawnee Mills All-Purpose Flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup Hiland Sour Cream
¼ cup Garden Club Strawberry Preserves
¼ cup Garden Club Peach or Apricot Preserves
Crumb Topping:
¼ cup Hiland Unsalted Butter, melted
¼ cup brown sugar
¼ cup Shawnee Mills All-Purpose Flour
½ teaspoon cinnamon
1. Preheat oven to 350 degrees. Lightly grease a 9-inch square baking dish.
2. Cream together butter and sugar until light and fluffy. Add vanilla, stirring to combine. Beat in eggs, one at a time, mixing until batter is smooth.
3. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Add to butter mixture, alternating with sour cream. Begin and end with the sour cream, beating well between each addition. Spread batter into pan.
4. In a small bowl, stir together strawberry and peach preserves, then drop by the spoonful on top of the batter. Gently swirl the preserves through the cake batter using the tip of a spoon.
5. Make crumb topping by combining all ingredients together. Using the back of a spoon, spread the crumb topping onto the batter.
6. Bake at 350 degrees for 45 minutes or until wooden pick inserted in center comes out clean.
