Flavor Your Life Details How to Make Tuscan Cipollata with Tuscan Olive Oil

Cipollata is a traditional Tuscan onion soup. For this recipe you will need 28 oz onions, 1 carrot chopped, 1 celery stalk chopped, 1 lb. pork ribs, 1/8 lb. bacon, 1/8 lb. sausage, 2 tablespoons of Tuscan olive oil, 8 slices of stale bread, and salt, pepper and garlic to taste.
Start preparing this dish by placing 6 ½ cups of water in a large skillet and adding the carrot, celery and pork ribs. Bring to a boil and let the pork ribs cook until the meat can fall off the bone. While the meat is cooking, slide the onions and soak in water. Heat up a pan with Tuscan olive oil and fry the bacon and sausage. Add two ladles of pork stock to the mixture of olive oil, bacon and sausage. Remove pork meat from the bone and add to the soup along with onions, and remaining broth. Serve over the bread slices in soup bowls.
