Start by chopping the green beans and cook them in boiled water until they are al dente. Drain the beans making sure to keep them warm. With the carrot, celery, onion, garlic, salt and pepper, create a court bouillon. Let it simmer and then remove the vegetables from the pot and leave the stock boiling. Cook the raw shrimp in the court bouillon for 5 minutes, drain and add to the beans.
For the sauce, mix the hardboiled egg yolks, lemon juice, and chopped parsley with a drizzle of olive oil and the bean and shrimp mixture. Toast the bread slices and then place the bean and shrimp mixture on top. Slice the tomatoes to prepare as a garnish. Along with the tomatoes, garnish the bruschetta with basil and a drizzle of olive oil. It is best when served warm.
