Pour two inches of water into the pot and add one tablespoon of sea salt. Cover the pot with the lid and bring the water to a boil. Once the water is boiling, place the lobster onto the rack, cover the lid and bring the water back to a boil. The lobster should be steamed for 14 minutes for the first pound of weight, plus an additional three minutes for each extra pound.
Grilling lobsters develops excellent flavor and it is a great excuse to spend more time outdoors no matter what time of year. Using the same boiling instructions, par-boil the lobster for five minutes after setting the grill to medium or high heat. With a sharp knife, cut the lobster down the middle and remove the veins in the tail, the green tomalley and the sand sac located behind the eyes. Season the lobster or apply a marinade if preferred and place it on the pre-heated grill shell-side down for eight to 10 minutes until the lobster meat is firm.
