Hyatt Regency Tamaya Resort Now Offers "Spirit of the Southwest" James Beard Menu

For a limited time, Corn Maiden fine dining restaurant at Hyatt Regency Tamaya, is recreating the six course menu from the James Beard culinary event for resort guests and dining patrons. The prestigious James Beard House is a New York City based non-profit institution named after James Beard – a champion of American cuisine who helped to educate and mentor generations of professional chefs and food enthusiasts. The James Beard House promotes the culinary arts by honoring chefs, wine professionals and journalists – both established and emerging.
After representing New Mexico in the Great American Seafood Cook Off in New Orleans, Executive
Chef Cheryl Scantlebury, Executive Sous Chef Patrick Mohn, Chef de Cuisine Eric Stumpf and Sous Chef Matt Schnooberger were invited to work the Beard kitchen in the company of Foundation members and industry professionals. Executive Chef Cheryl Scantlebury summed it up by saying, “James Beard House was an amazing experience that I will remember for the rest of my life.”
In celebration of this honor, the public is now able to share in the excitement and flavors of the James Beard House without traveling to the big city. The “Spirit of the Southwest” menu has been re-created at the resort’s Corn Maiden restaurant.
Guests will partake in the same items from the James Beard House menu including: Orange-Lavender
Duck Breast on Vanilla Biscochito. Entrée choices will feature: Elk Posole, New Mexico Beef Carpaccio, Sweet Corn–Crusted Brown Trout, and Bison Filet. The star of the evening, the Green Chile Piñon Apple Pie will complete the meal. The “Spirit of the Southwest” menu is being offered for a limited time, through August 2014.
