Local Coffee Roaster Grows; Adds More Cafes to Roster
Beaverton, OR (PRWEB) October 05, 2013 -- It’s not easy running a small café. Just ask anyone who has worked in the food services or café business and they will tell you stories of struggle and hardship. But they will also tell you about passion and dedication, tenacity and perseverance. In some cases, they will tell you the roaster who supplies their coffee beans has been their largest supporter and mentor.
“We are committed to growing Metro Perc and in order to do so, we have to find partners with similar passions,” says Robert Jepsen & Ned Macaddino, co-owners of Metro Perc. “We feel that the quality and care put into the roasting process of the Dovetail Coffee beans is truly unparalleled and similarly matches the care we put into every drink. Originating as a small café in Aloha that opened in 1993, Dovetail Coffee Roasters has since grown to become a wholesaler and roaster, serving a small but growing contingent of independent coffee houses, café’s and offices.
“I sold insurance,” says Cathy Zellmer, owner and self-described ‘Queen Bean’ of Dovetail. “But I got hooked on coffee. I found my passion in life and the next thing I knew I was operating a café.”
Zellmer operated Coffee Brake in Aloha for three years before selling the cafe and getting exclusively involved in the roasting and wholesale side of the business. Her natural ability to help and mentor people lead her to take one of the cafés she serviced under her wing and form a mentor/roaster relationship.
“From the start I could tell Cathy was different,” Adam Reid, co-owner of Coffee’s On Gresham, says. “She stayed late and arrived early. She helped me set up the café, train the workers and took a true interest in our success. Dovetail represents so much more than just a roaster who supplies our beans. They remain one of our greatest champions and advisers, and that’s something very rare to find in a roaster.”
In 2012, Dovetail relocated to a space on Nimbus Avenue in Beaverton where she and business partner and lead roaster, Matt Knight, have set up shop.
“We have welcomed two new cafes recently- Park News Café and now Metro Perc,” says Zellmer. “What makes us different is our care in whether or not the cafes we serve survive and thrive. We’re not going to drop the beans and run. We are truly invested in the training of the staff and the success of the owners.”
Zellmer says her plan is to continue the growth of the company by providing quality beans to local cafes, continuing to grow sales nationally, and offering coffee tasting classes from the Beaverton tasting room. Her ultimate goal is to serve a dozen local cafes by the end of 2014.
