Adelaida Cellars: Groundbreaking for New Hospitality Center
Known to be the oldest producing Pinot Noir vineyard on the Central Coast, Adelaida Cellars celebrated the groundbreaking ceremony for the winery’s new hospitality center on October 16. The new addition will stand next to the existing winery, not taking away from the current breathtaking views of the Santa Lucia Mountains and iconic walnut trees throughout the property. Recently celebrating its 50th anniversary, Adelaida continues to pioneer winemaking by improving their efficiency of a vineyard driven winery.
Alta Colina: New Winery and Tasting Room
More than ten years after Alta Colina owners, Bob and Lynn Tillman, founded their dream vineyard off Adelaida Road in west side Paso Robles, the award-winning winery is opening its state-of-the-art production facility and tasting room in late November 2014. The new addition will develop an emphasis around crafting world class, estate-grown wines, while incorporating green technology into the building that will house the winery, tasting room and offices all under the same roof.
The newly positioned boutique winery will include the only Tesla charging station in Paso Robles Wine Country, as well as a nighttime cooling system, native and drought tolerant landscaping, LED lighting throughout and a grey water system for sustainable irrigation.
Epoch Estate Wines: Eighth Vintage in New Winery
Ten years, seven vintages, and two estate vineyard plantings later, Epoch Estate Wines will create an eighth vintage in their new York Mountain winery. Only located twelve miles from the Pacific Ocean, the 17,000 square foot winery will house modern architecture with a custom barrel room featuring natural temperature control.
Encompassing simplicity and flexibility, the new winery is constructed to meet a winemaker’s dream using state-of-the-art methods to create its varietals.
Haymarket: A Gourmet Food Purveyor
Neighboring Hotel Cheval, Haymarket is Paso Robles’ newest Gourmet Food Purveyor. Haymarket fills the nearly 1,000 square foot location where Vivant Fine Cheese used to be before moving down the street. With all menu items neatly packaged to go, food lovers can purchase their selections and enjoy them at home, in the park or on the patio situated outside of the market.
Every morning a selection of baked goods is available, including fresh-baked scones, muffins and bread, as well as Haymarket’s own blend of coffee roasted by JoeBella’s in Atascadero. Salads and sandwiches are offered throughout the day; in the evening heartier entrees and sides are sold. The entrees change each night, although the selections of pasta, seafood, chicken, lamb, beef or pork will remain available. Featured menu items include beef tenderloin, grilled lemon chicken, linguine shrimp, buttermilk-baked chicken, salmon lasagna, salmon cakes and more.
L’Aventure Winery: Cave Project and New Tasting Room
Positioned in the center of their vineyard with a 360-degree view of the estate, L’Aventure Winery is embarking on an incredible renovation. The new cave and tasting room began construction in August 2014 and is expected to finish by summer of 2015. The spacious new tasting room will not only accommodate more individuals, but also encapsulate a simple, yet modern ambiance. Creating a more intimate experience, guests will be in clear sight of the entrance to the new wine caves and will have the opportunity to explore them.
The underground caves will mainly be used for barrels and storage of their wines as the temperature plays a huge role in the winemaking process. There will also be a VIP/Library room where the winery will showcase its collection of estate wines. Reservations will be required.
Pop 46: Pop Up Dining
Chefs Will Torres and Andrew Webber are supplementing their day jobs to bring pop-up dining to San Luis Obispo County. Pop 46 restaurant will represent inventive, “chef-driven” meals at multiple seating times. Launched in July, Pop 46 takes over existing restaurants during off-hours, using their kitchens (and permits) to create extraordinarily creative, one-time-only dinners unlike any other on the Central Coast.
Rancho Dos Amantes: New Vacation Rental and Corporate Retreat Venue
Tucked between two lakes in Paso Robles, owners, Tamara and Jeff built their perfect get-away with a developing desire to share it with the rest of the world. Rancho Dos Amantes, a rustic farm-stay style bed and breakfast, is comprised of roughly 40 acres offering individuals the opportunity to host an event, take a cooking class or stay overnight and enjoy the serenity of the location. As the owners say, “we are a little out of the way, a lot out of the ordinary.” Surrounded by open fields and ancient oak trees, guest will enjoy the calm and relaxing environment, unwind on the patios, wander the garden, and learn about their farm.
Thomas Hill Organics: New Chef
Thomas Hill Organics recently appointed Chef Christopher Manning as Executive Chef. Showing an appreciation for fresh, regional ingredients, his cuisine adapts to the seasons with a blend of classical French tradition and avant-garde creativity – a style that is reflective of Thomas Hill Organics. Formerly an executive chef at étoile Restaurant, at Domaine Chandon and Peju Winery, located in Napa Valley, Christopher paved the way for its Michelin Star rating and was soon after sent to Moët & Chandon in Epernay, France, to further refine his culinary skills under legendary Chefs Pascal Tingaud and Bernard Dance. Christopher Manning is a signature chef with defined experience that will maintain and diversify the farm-to-table experience.
Tooth & Nail WInery: New Winery Opening at Former Eagle Castle
Rabble Wine Company, the winemaking arm of Central Coast grape grower Rob Murray, is in the process of a major remodel of the former Eagle Castle Winery on Highway 46 West in Paso Robles. With plans to utilize this space as the new home to Tooth & Nail Winery, the redesign will feature a tasting room and library for indoor tastings, as well as outdoor tasting terraces complete with misters, heaters and couches to enjoy wines by the glass or bottle.
The Tooth & Nail Winery tasting room will pour wines from the company’s four brands: Tooth & Nail, Force of Nature, Stasis and Amor Fati. Event terraces and an Amor Fati room will be a perfect space for hosting public and private events as well as weddings. In-house chef Spencer Johnston, owner of Danior Catering, will offer food specifically paired with Tooth & Nail wines for winery guests.
Vineyard Dog Park: New Mural Unveiling
Vineyard Dog Park celebrated the unveiling of its new mural in early September with a coffee social and artist reception. Painted by Templeton student, Savanna Reifers, dogs of all ages and sizes are welcome to run wild thanks to Parks4Pups. As a non-profit organization, Parks4Pups encourages San Luis Obispo County to provide areas in the North County for off-leash recreation for pet owners and their dogs. Vineyard Dog Park amenities include water, shade trees, picnic tables, park benches, dog bag dispensers, dog toys, and wading pool (summer time only).
This mural creates the perfect symbol of unity amongst the community and their fur babies.
