Renowned New Forest Hotel to Launch New Flagship Restaurant

Opening in early March, the restaurant is inspired by New Forest nature. Cambium will offer a creative and enchanting dining experience for guests and members of the public alike.
Located within the 4 star Hotel, the new restaurant will deliver not just a menu created by the highly acclaimed Paul Peters, but a truly encapsulating dining experience.
The newly appointed Executive Chef Paul Peters has a commitment to delighting all the senses. This is reflected in the original menu and supports the hotel’s mission to offer guests a unique experience within one of the country’s most ancient and relaxing landscapes.
Speaking of his passion for food and his move to Careys Manor Paul says,
“I firmly believe that if you love food it will love you back. I’ve built my career on loving what I do and fulfilling my passion for food.
“I’m really excited about my move to Careys Manor Hotel and being involved in the launch of the new flagship restaurant – Cambium” says Paul.
The name Cambium is Latin for the layer of cells lying between the wood and bark of a tree from which new bark and wood cells originate. This process results in the iconic rings through a trunk, used to interpret a tree’s age.
The name is reflective of Careys Manor’s love affair with the New Forest and the desire to showcase the rich natural resources abundant in the local area.
This love of the forest is reflected in not just the menu, but also the new refurbished décor of the Restaurant. With hand painted English trees adorning the walls and moss like seating, guests will be sure to feel the tranquility of the forest within the walls of the restaurant.
The new menu concept will be a gastronomic tour of Hampshire, not just in terms of taste, but a complete dining experience, constantly evolving and delighting all the senses. Paul states,
“I like to use local ingredients in a worldly way, pulling influence from my own experience and memories to re-interpret a dish, mixing nostalgia and modernity together.”
The menus will be a combination of a 3 Course A la carte menu priced at £55 and a 7 Course Tasting menu for £70 incorporating sustainable Shellfish from Lymington and free-range Chicken from a small 42 acre farm called Cobley Wood in Ringwood.
Prior to his appointment at Cambium, Paul was Executive Head Chef at a number of three AA Rosette restaurants and at some of the most famous four and five star hotels in London including a stage with Nico Ladenis at Chez Nico and John Burton-Race at The Landmark Hotel in London and Marco Pierre White at the Hampstead Brasserie, ‘MPW London’.
Most recently, Paul was the creative force behind the Black Swan in North Yorkshire giving seasonal, Yorkshire produce a modern and exciting twist.
