Richie Farina Promoted to Executive Chef at Michelin-Starred Moto Restaurant
Chicago, Illinois (PRWEB) January 10, 2014 -- Moto, offering zero food mile cuisine in Chicago’s trendy Fulton Market District, is delighted to announce the promotion of Richie Farina to the position of Executive Chef.
In his former role as Chef de Cuisine, Richie has already been refining Moto’s plate with his distinctive style of culinary inspiration, and now he is prepared to incorporate even more of his creativity and ingenuity into Moto’s menu as he guides his team to the next level as Executive Chef.
Chef and Owner Homaro Cantu said, “Chef Farina has been an invaluable part of the Moto lineage for over six years. I am a firm believer as our culture in cooking evolves so must our definition of those who work in our restaurants. The leader in the kitchen who oversees the food in my mind is an executive chef, not a Chef De Cuisine, and Chef Farina is a chef's chef who implements his ideas into the Moto menu along with Executive Pastry Chef Claire Crenshaw."
“My dedication to letting seasonal ingredients have a voice in the dishes I create allows me to tell a story through cuisine that preserves the integrity and purity of everything we use,” said Executive Chef Richie Farina. “That coupled with the strong ethos of quality and service in an environment dedicated to delicious, uncomplicated food, is what inspires me every day, along with the beauty of the products delivered from the finest purveyors.”
Before becoming Executive Chef, Richie was Chef de Cuisine at Moto. Born in Staten Island, NY, he grew up in Florida in a large Italian family, so food has always played a big part in his life. Before going to Johnson & Wales University in Rhode Island, Richie began his culinary career flipping pizzas. While in school, he won the National Collegiate Ice Carving Championship three years in a row. He then went on to work in Boston for a few years honing his craft, before ending up in the Windy City. He inspires to create dishes never seen before and to make an experience instead of just food.
In addition to the promotion of Executive Chef Farina, January marks 10 years since Chef Cantu opened the doors to Moto. To celebrate this special anniversary, Executive Chef Farina will take diners on a culinary feast featuring 12 courses with 10 wine pairings. The anniversary menu—running January 29 through February 8—will feature iconic dishes alongside some of today’s new, inspired creations. Guests will also be signed up to receive an autographed copy of the upcoming The Moto Cookbook. Opening day pricing ($165) excludes tax and gratuity.
